Artichoke Fritata

Drain marinade from 6 oz artichokes into a fry pan; discard remaining marinade.

Chop all artichokes and set aside.

Add onion and garlic to fry pan and sauté until limp.

In a bowl, beat eggs, and add bread crumbs, salt and other seasonings.

Stir in cheese, parsley, artichokes, onion and garlic.

Put mixture into a greased 7 x 11" baking dish. Bake at 325 deg for 30 minutes or until set.

Cool in pan, then cut into 1" squares.

Serve cold or reheat at 325 deg for 10 minutes.

Freezes well.
