Put 2 full heads of garlic in baking dish.
Drizzle with 1 T olive oil and sprinkle with salt and pepper.
Cover and bake for 1 hr at 275 deg.
Uncover, baste with existing oil, cover again and bake 1 hour more or until tender.
When done, separate cloves and, with a scissors, cut away excess skin.
Squeeze garlic cloves and spread onto slices of French bread or crackers.
