Individual Beef Wellingtons

Rub filet mignon steaks with garlic, salt, pepper and thyme.

Sear and cool.

Spread with mushroom duxelles.

Seal in puff pastry; decorate with scraps of pastry.

Bake at 425 deg for 15 min or until nicely brown.


Put the mushrooms in a dish towel, a few at a time and squeeze out the moisture.

In a skillet, heat butter and oil; sauté onions.

Add mushrooms and sherry and cook until dry.

Season with salt and pepper.

Makes about 2/3 cup.
